Whether you're looking for something light or want to add more vegetables into your diet, this stir-fry fits the bill perfectly! With just 30 minutes of active cooking time, you can serve it up as a main course for four people.

Chicken stir-fry is a versatile dish that allows you to use any leftover ingredients from other meals. It’s perfect if you have some chicken on hand and want to whip something up in no time without buying anything new. The key is balance: include colorful veggies like bell peppers, broccoli, and carrots for a boost of vitamins.

Ingredients

  • 400g skinless, boneless chicken breast strips
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free option)
  • 1 tablespoon cornstarch mixed with 3 tablespoons water (for thickening the sauce)
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

For this recipe, you will need about 10 minutes of prep time. Start by slicing your chicken into bite-sized strips. While the chicken is marinating, slice up all the vegetables and chop the onion. You can also measure out the soy sauce, cornstarch mixture, and any other seasonings.

Instructions

  1. In a bowl, combine the chicken with 1 tablespoon of vegetable oil, salt, pepper, and garlic. Let it sit for about 15 minutes while you chop up your vegetables.
  2. In another pan or wok, heat up the remaining oil over medium-high heat until hot but not smoking. Add half of the prepared veggies (red bell peppers) and stir-fry them for around two minutes until they start to soften slightly. Transfer this batch into a bowl as you continue cooking the next portion.
  3. Add the other half of the vegetables, including green bell peppers and broccoli florets, along with another tablespoon of oil if necessary. Stir-fry these for about three more minutes. Again, transfer them back into the bowl once done.
  4. Return all the stir-fried ingredients to one pan and add 2 tablespoons soy sauce. Mix well to combine and let it simmer for a couple of minutes until everything is heated through.
  5. To thicken the sauce, slowly pour in the cornstarch mixture while stirring continuously until the sauce thickens to your desired consistency.
  6. Once done cooking, taste and season accordingly with salt or pepper if needed. Serve immediately over rice or noodles for a complete meal!

Tips & Variations

  • Add some protein: You can also add tofu, shrimp, or any other type of seafood to this dish.
  • Vary the vegetables: Feel free to experiment with different kinds of veggies like cauliflower, bok choy, etc., depending on what you have available in your fridge!
