  • 3 large eggs beaten with water (or milk) until well blended
  • 2 tablespoons olive oil, divided
  • 1 15-ounce can tomato sauce (preferably fresh or low-sodium)
  • 1 cup grated Parmesan cheese
  • 1/4 cup sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder (optional but highly recommended)
  • Paprika for garnishing
  • Fresh basil or parsley for serving (optional)

Instructions:

  1. Preheat the oven. Preheat your oven to 350 degrees Fahrenheit. You'll also want to grease a baking dish large enough to hold all of your chicken pieces in one layer, allowing them room to brown on both sides during cooking.

  2. Prepare the breadcrumb coating mixture. In a shallow bowl or plate, combine flour and Italian-seasoned breadcrumbs. Set this aside for dusting the chicken before dipping into egg wash.   6. Transfer the cooked chicken breasts to your preheated baking dish. Spoon some of the simmering sauce over the top of them before covering loosely with foil or parchment paper and placing in the oven for 20 minutes. Let rest about five minutes before serving hot, garnished with fresh basil leaves if desired.

  7. At this point, you can choose to serve your Chicken Parmesan immediately alongside a side salad or steamed vegetables. Alternatively, let it cool down completely so that it can be sliced and stored in an air-tight container for up to four days.
