Instructions
- Begin by preheating your oven to 325°F (160°C).
- In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Once hot, add the beef chunks and sear them until brown on all sides. This should take about 4-5 minutes per side. Remove the beef from the pot as it browns and set aside.
- Add the onions, garlic, carrots, celery, and red pepper to the same pot. Sauté these vegetables for about 3-4 minutes until they begin to soften slightly.
- Return the browned beef to the pot along with the tomato paste, thyme, salt, black pepper, bay leaves, and beef broth (and optional red wine). Stir well to combine all ingredients thoroughly. Bring this mixture up to a simmer over medium heat before transferring it to your preheated oven.
- Cover the pot and allow the stew to cook slowly in the oven for 3-4 hours until the meat is extremely tender, checking occasionally to ensure that there isn't too much liquid in the pan. If needed, you can add more beef broth or water during cooking if it appears dry.
- Once your stew has cooked sufficiently, remove one bay leaf (if used) and taste the dish. Adjust seasoning with additional salt and pepper as necessary.
