Vegetarian Lasagna Recipe: A Family-Favorite Dish
Vegetarian lasagna is a popular choice for those who prefer plant-based ingredients but don’t want to miss out on the delicious flavors of this classic pasta dish.
This recipe serves 6 people and takes approximately 2 hours to prepare. Let’s dive into how you can make your very own scrumptious vegetarian lasagna at home!
Ingredients
- 9 sheets of no-boil lasagna noodles (preferably whole wheat)
- 1 pound of crumbled firm tofu
- 2 cans of crushed tomatoes or tomato sauce
- 4 cups of shredded low-fat mozzarella cheese, divided use
- 2 cups of ricotta cheese
- 3 eggs, beaten
- 1 tablespoon of dried Italian herb mix (or fresh basil and oregano)
- 1 cup of grated Parmesan cheese (optional)
- Olive oil for greasing the dish
- Salt and pepper to taste
Instructions
Preheat your oven to 375°F.
In a large mixing bowl, combine the tofu with the crushed tomatoes or sauce. Stir until thoroughly mixed. Season with salt and pepper according to your preference.
Lay out half of the no-boil lasagna noodles in the bottom of a 9x13 inch baking dish (lightly greased).
Pour one-third of the tomato-tofu mixture over the noodles. Sprinkle two cups of shredded mozzarella cheese and half of the ricotta cheese on top.
Top with another layer of lasagna noodles, followed by a third of the remaining sauce and mozzarella. Add in one cup of shredded ricotta cheese. Layer once more with lasagna noodles, this time sprinkling half of the Parmesan cheese (if using) and two-thirds of the remaining mozzarella.
Finish the dish off with the last layer of no-boil noodles and top everything with a generous amount of sauce. Cover the entire baking dish with shredded mozzarella cheese and sprinkle some additional Parmesan for added flavor.
Bake in preheated oven at 375°F for approximately one hour and fifteen minutes or until the lasagna is thoroughly heated through and the top is nicely golden brown. Allow it to sit undisturbed on a cooling rack for about five minutes before slicing into portions.

Making vegetarian lasagna at home allows you to enjoy this beloved dish without compromising on taste or nutritional value. By following these simple steps, you can create an absolutely delicious meal that will satisfy even the pickiest eaters!
