For this recipe, you'll need the following ingredients:

  • 16 no-boil lasagna noodles
  • 2 cups cashews (soaked in water for at least 4 hours)
  • 1 can of crushed tomatoes with herbs and garlic
  • 10 ounces fresh spinach leaves, chopped finely
  • 6-8 medium mushrooms, sliced thinly
  • Salt and pepper to taste

Begin by preheating your oven to 375°F (190°C). Drain the soaked cashews and blend them with two cups of water until you have a smooth consistency. This will form the base for our creamy sauce.

In a large skillet, heat up some olive oil over medium heat. Once the pan is hot, add the sliced mushrooms and sauté until they are golden brown. Season these with salt and pepper according to your taste preference. Next, stir in the chopped spinach leaves into this mushroom mixture, cooking it gently for another minute or so until the spinach wilts.

Now, while you have the mushrooms and spinach ready, let's prepare our cashew cream sauce. Drain any excess water from the soaked cashews after blending them smoothly and then blend the mixture further with a bit of lemon juice, garlic powder, salt, pepper, and nutritional yeast (optional but highly recommended for extra flavor). You can also add more or less seasoning depending on your personal liking.

Once our sauce is ready, it's time to assemble the lasagna. Start by layering one-third of the drained lasagna noodles at the bottom of a greased baking dish. Spread half of the cashew cream sauce over this noodle layer and then sprinkle with half of the mushroom-spinach mixture evenly across it.

Add another third of the noodles, followed by the remaining portion of both the cashew cream sauce and mushroom-spinach combo. Repeat these layers two more times until all ingredients are used up except for a thin layer of cashew cream left over for the top.

Finish off your lasagna by spreading the remaining cashew cream sauce evenly on top and optionally covering it with shredded mozzarella cheese (if you're not vegan). Place this baking dish into the preheated oven at 375°F for about 40 minutes or until the top is bubbly and slightly golden brown. Allow your lasagna to cool down slightly before slicing and serving.
