Ingredients

  • 2 lbs beef chuck or stew meat, cut into 1-inch cubes
  • 4 tablespoons olive oil
  • 3 onions, finely chopped (about 2 cups)
  • 5 cloves garlic, minced
  • 1 large carrot, peeled and sliced thinly
  • 1 rib celery, chopped
  • 2 cups beef broth or stock
  • 2 tablespoons tomato paste
  • 3 bay leaves
  • 1 teaspoon dried thyme (optional)
  • Salt and freshly ground pepper to taste
  • 2 tablespoons all-purpose flour
  • 3 tablespoons Worcestershire sauce
  • Chopped fresh parsley for garnish (optional)

In a large heavy pot or Dutch oven, heat the olive oil over medium-high heat. Pat the beef dry with paper towels to ensure it browns properly. Working in batches if necessary, sear the beef until well browned on all sides. Remove each batch from the pot as it browns and place on a plate.

Once all the beef is seared, reduce the heat to low. Add the onions and garlic to the pot and sauté for about 5 minutes or until the onions are translucent and soft. Stir in the tomato paste and cook for another minute.

  1. Add the browned beef back into the pot along with the carrot slices, celery, bay leaves, thyme (if using), salt, pepper, beef broth or stock, and Worcestershire sauce.
  2. Bring to a simmer, then cover and reduce heat to low. Let it cook gently for 1 hour and 30 minutes until the beef is very tender.

To thicken the stew slightly, mix the flour with about half of the broth and stir back into the pot. Simmer for an additional 15-20 minutes or until you reach your desired consistency.

Before serving, remove and discard any bay leaves. Taste and adjust seasoning if needed, adding more salt and pepper as necessary.
